Instructions to make Akra ('kosai):
  1. Add beans in to a clean bowl and soak for 15minutes, after 15 minutes beans in mortar and pound with pestle lightly.
  2. Transfer the beans in to a bowl add water and gently seive the water in a strainer the black eye will follow gently repeat the process for 4 times.
  3. Add the beans in a tray and take out the remaining black eye and soak for 1hr
  4. Add slice onions,red pepper,scotch bonnet and blend till smooth, add salt to your taste and beat the beans batter for 10mins
  5. In a pan add oil in a medium heat,when the oil is hot scoop the beans batter and add in the oil and fry on both sides till golden brown and take it out and place in a seiver, you are done, it's ready to be enjoyed.
