DIRECTIONS In a large skillet add the sausage and cook until most of it is brown. Add the grated potatoes, onion, and salt to the skillet. Cook sausages in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. I am totally a breakfast person!

  1. Heat oil in a nonstick skillet. Add the onions and bell peppers and saute until translucent. Add the hash browns and sausage and fry until the hash browns are golden brown and crispy and sausage is cooked well. Reduce heat to medium. Using a spatula, make 2 holes in the hash brown mixture. Carefully break 1 egg and drop into each hole.
  2. Sprinkle the eggs with salt and pepper. Generously sprinkle the cheese all over the hash brown-egg mixture. Cover with a lid and cook for 5-10 minutes or until the whites and yolks are firm and not runny.

Cook sausages in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. I am totally a breakfast person!
